Pumpkin Cheesecake Cookies

I have made these twice. The first time, I made them as noted and didn't love the flavor of the graham cracker crumbs on the outside. I made them again, leaving out the step of rolling them in graham cracker crumbs and adding a bag of pumpkin spice chips. They taste great!

these are brilliant! They so soft, and chewy and wonderful!
