Coconut Sugar Cookie Bars

These sugar cookie bars are perfectly coconutty, with a coconut cookie crust and a creamy coconut frosting too. So delicious! With a coconut sugar cookie base, coconut frosting and topped with shredded coconut these coconut sugar cookie bars are the perfect dessert for all coconut lovers!
The sugar cookie base is made with coconut extract and coconut oil (instead of butter). And then the frosting is perfectly coconutty too with more coconut extract and lots of shredded coconut. You can use coconut oil in the frosting instead of butter if you want, and you can also use coconut milk instead of cow’s milk too. Most of the flavor comes from the coconut extract.
Ingredients:
For the Bars:
- 2½ cups flour
- ½ tsp baking powder
- ½ tsp salt
- ½ cup coconut oil, soft
- 1 cup sugar
- 1 large egg
- 2 TBS sour cream
- 1 tsp coconut extract
- 1 tsp vanilla extract
For the Frosting:
- 5 TBS butter, softened
- 3 TBS milk
- 1 TBS vanilla
- 1 tsp coconut extract
- 4 cups powdered sugar
- 1 cup shredded sweetened coconut, divided
